BOISSY-SAINT LEGER, France–In the town of Boissy-Saint-Leger, about 11 miles southwest of Paris, there is a long, battered six-foot concrete wall running alongside a busy avenue. Scrawled with graffiti, the condition of the wall belies the two things it separates: a pleasant Paris suburb, and the Grosbois Trainer Centre, a huge, bucolic equine Shangri-la that
